What's For Breakfast?


So last week I wrote a post about trying to cook more from scratch, and making things that are yummy and let's not forget about easy on the wallet.

First thing I cooked after posting that (for Sat morning breakfast) was PW's Breakfast Burritos.

Anyway, I will admit I don't get a pass on the "whole foods" thing, b/c I used frozen hash browns instead of making the potatoes from scratch. I also used bagged shredded cheese. I did not make my own cheese, I did not buy a big block of cheap cheese and then grate it. I used bags (2 cups per bag)I bought on sale for about $1.00 a bag. Cheap, yes. Whole/organic, no.

Took me about 1/2 hour to make, so this is definitely something I could make on a school morning. Also, I could shave that morning time down if I did some prep work the night before, like chop the peppers, mix up the eggs, cook the sausage. For that matter, I could make the whole mess the night before and then heat them up in the oven if I wanted.

Who am I fooling, I would never do that.

If you click her link you can see the whole recipe, step by step, with beautiful photographs. You're not going to get that from me, but in a nutshell I:
Browned the sausage with the diced pepper and onion.
Beat the eggs in a bowl and added some milk and the cheese and some salt and pepper.
Added the hash browns to the sausage and cooked them till the potatoes began to brown.
Added the egg mixture to the pan with the sausage and patatoes. Cooked till eggs were set.
Heated totillas in m/w.
Heaped big spoonfuls of the whole mess into a tortilla and folded up burrito-style.
Yelled "BREAKFAST!!!!!"
Got out of the way.


I'm trying to think how much they cost to make.

$1.50 (?) 8 count tortillas
$4.00 1 lb breakfast sausage
$1.00 2 cups shredded cheese
$0.50 (approx)1 pepper (though Ree used 2 in her recipe)
$0.50 (approx) 1 onion (Ree didn't call for any, but she uses onions in her brkfst potatoes)
$1.25 1/2 bag frozen hash brown potatoes
$1.75 Dozen eggs (I get eggs from my chooks, but this is a fair price, right?)


So that's roughly $10.00, more or less. Not the cheapest breakfast I've ever made, but very filling with eggs and cheese and potatoes and sausage. Fed about 8 people. And yummy? Oh yeah.

A Tip For Tuesday

Here's a tip for some guilt-free yumminess:
















Found this on Pinterest and tried it last night. I gotta tell ya', it's good. My blender wasn't acting up to speed (no pun intended), so I added alittle skim milk to help it smooth out the frozen banana, but I don't have a problem with dairy, so I didn't care about adding milk.

I guess it was originally from Tumblr(*), and so here are the instructions from the posters:

Chocolate-Banana “Ice Cream”

Freeze a banana, then combine with 2 tbsp cocoa powder and blend until smooth and creamy. Dairy-free, 110 calories. But most importantly: frigging delicious, because seriously dudes, bananas and chocolate were meant to be together <3 I use a frozen banana with a spoonful of peanut butter & half a glass of milk for a morning smoothie. This sounds delicious. I need to pick myself up some more bananas…

Oh, yummy, yummy, yummy....

My sisters are here for a visit. On Tuesday night, one of them took over my all-time most-hated chore.

Cooking dinner.

I would do laundry, clean the cat boxes, and unclog toilets rather than cooking dinner. I hateithateithateit.

But back to the point. She cooked dinner. She made this oh-so-yummy baked chicken thing that she says is a Weight Watcher's recipe (tweaked a bit). And here it is for you, in all its glory. Sorry, no beautiful photographs. What can I say, I'm no Ree Drummond. Just take my word for it, it was yummy. And gone in like, no time flat.

Take some boneless, skinless chicken breasts, however many you need for your family. We used 3 regular-sized packages to feed 11 of us, and had plenty for leftovers, which we will eat tonight so I can get out of cooking again.

Filet 'em so they're thinner or buy yourself some of those tenderloins if they're on sale.

You know the bags of powder you mix up with milk and mayo or sour cream to make heavenly "homemade" salad dressing? Yeah, open up a bag or three of those bad boys. Roll the chicken around in the ranch powder, then dredge them through whisked-up eggs (WW just says egg whites but she went whole hog).

Oh, I forgot, before you do all that, take a bag of Sunchips, the French onion flavor, and smash it all up with your fists till they're nothing but crumbs. This also serves as cheap therapy. Get in touch with your inner rage and smash away. Then put the crumbs in a big bowl.

Coat the dredged chicken in the crumbs, and place on a sprayed baking sheet.

Cook on 375 for 20 - 30 mins.

OK, so my recipe narration is not so polished, I know. Leave me alone, I have other strenths, I swear. I happen to be an excellent toilet plunger.

Just trust me, this chicken is to die for. Tangy, succulent, moist, yumminess. Go make some.
